The cheese

For centuries the Netherlands have had a thriving cheese-making industry and export business, which began in the Middle Ages. One of the main trading centres was Gouda, where national and international merchants bought the large cheese wheels. Today, Gouda cheese has a strong international reputation, and is appreciated for its mild, nutlike creamy flavour. The cheese is made from whole milk only and has a characteristic yellow interior, dotted with a few tiny holes. It comes in wheels of 11 kg and usually has a dark yellow rind.

 

As premium Dutch bakery of cheese crispies, we only use the best quality Gouda, matured for 12 months, during which the cheese takes on its delicious strong flavour. The whole wheel (without the rind) is then ground to a paste and mixed with top quality flour and other ingredients, according to the original family recipe originating from just before World War II.
 
With our in-depth experience in making puff-pastry cheese crispies based on Gouda Cheese, we have developed a variant based on Cheddar Cheese, by far the best known and most widely consumed cheese in the world.

The original Cheddar cheese is a hard-pressed, uncooked cheese which is named after the village of Cheddar, located in the rich Somerset dairy country. The 12-month matured red Cheddar which is used to make our Cheddar Cheese Crispies and Sticks, has a rich, rather nutty flavour, which gives them an enjoyable mild, but rich cheese taste.

Recently, we have introduced Cheese Crispies based on the King of Cheese, PDO Parmigiano Reggiano (Protected Designation of Origin), to further complete our assortment. Parmesan cheese is a unique Italian cheese with an ancient history and is known worldwide as the King of Cheese. This cheese is handmade in the provinces of Parma, Reggio Emilia and Modena as well as in some areas of Bologna and Mantua. The Parmigiano Reggiano PDO used, has matured for 24 months and has a crumbly, grainy texture. The delicate and aromatic, slightly sweet scent and flavour make it an ideal ingredient for our ROKA Parmesan Cheese Crispies.
